Stuffed Pepper Soup


Ingredients:

1 pound lean ground beef
1 large onion, diced
3 teaspoons minced garlic
1 tablespoon olive oil
4 cups beef broth
2 29-ounce cans tomato sauce
1½ tablespoons Cajun seasoning
3 bell peppers, diced
¾ cup minute rice, uncooked
shredded cheese, for topping

Instructions:

Add ground beef, diced onion, garlic, and olive oil to a large stock pot. Saute over medium heat 2-3 minutes until fragrant and onions are tender.

Add tomato sauce, cajun seasoning, bell peppers and rice and simmer on medium-low heat for 20 minutes.

Taste and add salt and pepper to taste, if desired.

Top with shredded cheese and serve hot.
